Caplain offers different types of ovens:
- The convection ovens allow a cooking with rotating heat, one or several turbines ensure the circulation of a hot air between the trays. They will be preferred for cooking pastry or pastries.
- The rotary rack ovens ensure a homogeneous cooking of the products (pastries, breads, croissants ...), the trolley intruded in the cooking chamber rotates on itself during the entire cooking phase.
- The deck ovens, heat is provided by the stone floor (the floor) and the celling (the roof). They are also equipped with a steam generator (essential for cooking bread). They are generally used for cooking bread, croissants...
