Kneaders
A kneader is a machine used to mix pasta, to knead.
Kneading is the first step in the dough production process It is realized daily in bakery, for
different bread dough, in pastry for smaller amounts, and other food, pharmaceutical or cosmetic sectors.
The kneader applies a mechanical force in order to obtain the homogenization of the ingredients to be mixed.
For bread, these properties involve obtaining the development, the unwinding, and the orientation of the
gluten proteins as well as the incorporation of air in the dough.
